Typical recipe of our peasants, which prepared the Sunday sauce with the same spices and herbs used to season the sausage, as they hadn’t the economic opportunity to buy pork. The result is a sauce, also called the sauce of the farmer, whose flavors are reminiscent of pork sauce.
Tomato sauce, Frantoi Cutrera extra virgin olive oil, onion, salt, sugar, wild fennel seeds, bay, chili pepper. Acid: citric acid.
Heat for two minutes. Perfect with pasta (paccheri). Complete the dish with toasted breadcrumbs with olive oil, garlic and tufts of fresh fennel.
